High temperature dishwasher had temperature of 69C at the plate's surface as per max/min thermometer. The rinse cycle temperature shall be above 82C at manifold.)

Comments

A follow-up inspection was conducted, the following observations were made:
- High temperature dishwasher had rinse temperature of 74C at the plate's surface, as per max/min thermometer. Service company was on-site and explained that wires had corroded and the booster wasn't being turned on during the rinse cycle. A new thermometer display has been ordered and will be installed once it arrives as the rinse cycle is temperature is not showing.
- Dishwasher can be used and restaurant can open for service.
