Observation (CORRECTED DURING INSPECTION): 1) Bucket of bleach solution measured 0 ppm chlorine at the front. THIS IS A REPEAT VIOLATION.
2) Knife sharpening stones observed to be stored in stagnant water at time of inspection. Measured 22 deg C.
Corrective Action(s): 1) Staff made a bleach solution measuring 100 ppm chlorine. Ensure a bucket of bleach solution or spray is always available while in operation.
2) Discontinue practice of storing the sharpening stones in stagnant water as it promotes bacterial growth. Store stones in a dry and clean area.

Sushi display is stored at room temperature but is thrown away after 1 hour. Ensure time tracking is in place.
Bleach solution measured 100 ppm chlorine
Staff demonstrated proper manual dishwashing measuring 100 ppm Cl at sanitization step.
General sanitation is satisfactory
No signs of pests at time of inspection.
