Observation: Ice machine observed having mildew growth and dead fruit flies in the water.
Corrective Action(s): Immediately discontinue the use of the ice machine.
Empty, clean and sanitize, discard the first round of ice before resuming the use of the ice machine.

Observation (CORRECTED DURING INSPECTION): 1. High temperature dishwasher not working. Ran three times and thermometer reads 67.9C at highest.
2. Spray bottle of QUAT sanitizer measure 50ppm.
Corrective Action(s): 1. Please service dishwasher and ensure final rinse temperature at plate level reads 71C or higher.
Currently staff will be washing and rinsing using the dishwasher and dipping the dishware in QUAT sanitizer at the two compartment sink.
2. Staff refreshed sanitizer from dispenser which measured 200ppm QUAT sanitizer.

- All coolers measure 4C and below
- All freezers measure -18C and below
- All hot holding measure 60C and above
- No signs of pests
>>> there is some fruit flies, if there is more please contact pest control company
- Staff has valid FOODSAFE
- Gelato currently not being served, staff showed EHO the dipper well
- Temperature checked twice a day and logged.

- Thermometer observed broken in the single door standing freezer in the back prep area.
