-Follow-up inspection to November 6, 2019.
-Hot potentially hazardous sauces are rapid cooled in the walk-in freezer until approximately 4C and then transferred into the walk-in cooler. Staff are using a probe thermometer to verify proper cooling. Sauces in the cooler were probed at or below 4C. Ensure staff continue to use probe thermometers to verify potentially hazardous foods are cooled in a safe manner.
-Handwash stations easily accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Floor tiles along the prep line were replaced and were smooth, non-absorbent, and easily cleanable.
-Scoops were stored in a sanitary manner.
