Observation (CORRECTED DURING INSPECTION): Chopped green onion and tofu pieces stored on ice were measured at well over 4 C. Insert trays placed directly on top of ice cubes.
Corrective Action(s): Ice water added during inspection. Ensure ice water is in full contact with the sides and bottom of the insert trays if these are used for storage of food on ice - placing trays on whole ice cubes with no water will not provide enough thermal transfer to keep the food at or below 4 C.

Observation (CORRECTED DURING INSPECTION): Small amounts of food debris observed on parts of knives near handles; knives stored in clean knife racks during inspection.
Corrective Action(s): Knives cleaned during inspection. Note: ensure removable knife racks are cleaned and sanitized on a regular schedule (for example, the rack across from the deep fryers).

209 - Food not protected from contamination [s. 12(a)]
Observation: 1. Several light bulbs (for example, the lights in the dry storage room) require covers/shatter shields.
2. Several scoops were left inside bulk food bins. Disposable takeout containers were used as scoops in some cases.
3. Raw meat was stored directly over noodles, vegetables and other items in the cooler/freezer unit by the deep fryers. Cooler is equipped with wire shelving on this side.
Corrective Action(s): 1. Install covers by next week (15th November 2016).
2. Use only purpose-designed food scoops with handles if you wish to leave these inside bins. Ensure the handles stay out of the food. Do not use disposable takeout containers, as these will disintegrate and possibly contaminate the food, and cannot be properly cleaned.
3. Move all raw meats to the bottom shelving (or a dedicated, separate area) immediately. Always store raw meat below ready-to-eat items, as this will minimize the risk of drip contamination.

*Note: inspection conducted during busy period. Several cooler/freezer doors require immediate cleaning and sanitizing to prevent possible cross-contamination of staff's hands.
*Note: ensure food is kept out of the area directly below paper towel dispensers - this area is prone to drip contamination.
*All cooler and freezer temperatures satisfactory.
*Ice machine maintained in clean condition.
*Hand sinks in use by staff were equipped with warm water, liquid soap and paper towels (including staff washroom).
*Hot holding of miso soup and rice measured at > 60 C.
*Dry storage maintained in tidy condition.
*High-temperature dishwasher reached >71 C at the plate level during sanitizing rinse.
*Majority of food in coolers and freezers covered and protected from contamination.
