Routine Inspection:

-Both display coolers were 4 C or below.
-Sandwich cooler below 4 C.
-Walk in cooler below 4 C.
-Walk in freezer -18 C.
-Standing freezers around -15 C.
-Both coolers in customer area 4 C or below.
-Freezer in customer area below -18 C.
-Hot holding of soup greater than 60 C.
**Temperatures should be checked daily and recorded.

-Two compartment hand sink behind the counter fully equipped with liquid soap, single use towels, and hot/cold running water.
**Note: This sink is not to be used for dishwashing (not adequately sized and unable to carry out the proper steps of dishwashing in one compartment only). Dishwashing must be carried out in the dishwasher or in the designated two-compartment sink. Remove the dishes on the drying rack that are underneath the paper towel dispenser.
-Hand sink near the walk-in freezer is fully equipped with hot/cold running water, liquid soap and single-use towels.
-Low temperature dishwasher registered at approx. 100 ppm for chlorine.
-Bleach sanitizer available in labelled spray bottle.

*The shelves above the main bake counter has tape that is coming apart. Operator instructed staff to remove it today - good.

*Build-up of flour around equipment - operator stated all large equipment is on today's cleaning list. Increase frequency of cleaning and update sanitation plan if needed.
Ensure areas that are not easy to clean (underneath the display coolers) are covered properly to prevent build-up of dust/flour.

*Reminder: hair must be pulled back when handling food.

-Pest control services are in place.
