-Routine inspection of food premises:
-Operator indicates that the food premises is currently experiencing a power outage in the kitchen (since ~8:00am). Walk-in coolers/freezers are currently operational (connected to emergency generator). 2 upright coolers and the commercial dishwasher are currently without power. Timeline for restoration of power is currently unknown.
-Discussed contingencies for food-service during the power outage:
-->Manual ware-washing can be performed using the 3-compartment manual warewashing method (reference chart provided)
-->Disposable plates, cups, cutlery should be used for food-service until power restored to the commercial dishwashing machine
-->Foods in cold-storage should be discarded if times held in the danger zone (Between 4 and 60 degrees Celsius) exceed 2 hours
-->Perishable foods can be transferred to the operational walk-in fridges/freezers to extend usable shelf-life
-->Consider bringing in outside for food-service if generator power to walk-in fridges/freezers is lost or power outage persists for extended period (ie. >24hrs)
-Hand-washing stations are operational (hot/cold water, soap, paper towels available)
-Foodgrade sanitizer chemicals are available at 3-compartment sink and in the kitchen (Diversey quats-based sanitizers).
-No sanitation concerns noted at time of inspection
