Observation (CORRECTED DURING INSPECTION): 1. No sanitizer was prepared at the start of the inspection - food prep was happening at time of inspection.
2. In-use utensils were being stored at room temperature water.
3. In-use ice scoop for the ice machine was stored on a dirty pan cover.
Corrective Action(s): **Issues corrected at the time of inspection**
1. Staff filled the sanitizer container - 200 PPM chlorine residual detected. Please ensure that a sanitizer container or spray bottle is available whenever food is being prepared/ served.
2. As per staff, in-use utensils should be stored in an ice water bath. Staff added ice to the water bath - note: Facility just opened for business.
3. Staff brought the ice scoop and pan cover for washing and sanitizing. Please ensure all utensils are stored on a cleaned surface to avoid contaminating the cleaned utensils.

Observation: Debris noted on the floor, behind and beside most equipment and underneath prep counters.
Corrective Action(s): Clean, sweep and sanitize floor noted with debris.

Observation: Leaking noted on the underside of the ice bin - bucket noted below the ice bin.
Corrective Action(s): Repair the ice bin as all equipment are to be good working order. Pooling water may lead to pest harbourage and breeding and must be avoided.

Observation: Cardboard noted being in-use to line the cabinet below the ice bin.
Corrective Action(s): Remove and discard all cardboard. Cardboard cannot be used as liners in any food storage and preparation areas. All surfaces in a food premises must be imprevious to mositure, easily cleanable and in good condition.

Handwash station accessible, equipped with hot and cold running water, liquid soap and paper towel.
All refrigeration units were at 4.0C or below.
Freezer was noted at -18.0C.
Food contact items were noted sanitary and in good condition.
No signs of pest activities noted during the inspection.
Pearls are time-tracked. Discarded every 4 hours.
Drain plugs available for the 3-compartment sink for manual warewashing.
Staff (onsite at the time of inspection) has a valid FOODSAFE level 1 equivalent certificate.
