Observation: Sticky traps soiled with dead cockroaches. The staff stated that a pest control company implements pest control measures on a monthly basis.
Corrective Action(s): Replace the sticky traps. Call a professional pest control for pest management.

Observation: Build up of food debris and grease in the following areas:
- underneath the three compartment sink
- around the fryer
- behind chest freezers
Corrective Action(s): Clean the areas noted above. Implement a regular cleaning schedule in hard to reach areas (ie behind freezers, prep coolers, prep tables)

- General sanitation satisfactory. See violation section above.
- Three compartment sink available in the main kitchen for manual dishwashing. Sanitizer available at 100ppm chlorine concentration.
- Low temperature dishwasher (bar area) dispensed 50ppm chlorine sanitizer at 46C at the plate's level.
- Low temperature glasswasher (bar area) dispensed 100ppm chlorine sanitizer.
- Dry storage area has adequate space and wire racks. Dry food items stored min 15cm off the floor.
- FOODSAFE trained staff on duty.

Temperature control:
- All coolers: < or = 4C
- All freezers: < or = -18C
- Hot holding units > or = 60C
- Thermometers available in all coolers and freezers.
