Routine health inspection conducted. - Coolers at 4 degrees C or less. - Freezers at -18 degrees C or less. - Hot holding (internal food temperatures) at 60 degrees C or more. - Cold holding unit temperatures are monitored using a wireless temperature monitoring system (24 hours/day). - Probe thermometers available on site for internal food temperature checks. - Food is protected from potential contamination. Raw animal products and ready-to-eat foods are properly organized, food is stored off the ground, portioned items are covered and dated. - Hand sinks supplied with hot and cold running water, liquid soap, and paper towels. Proper hand washing practices observed throughout inspection. - Equipment and utensils maintained in sanitary condition. - Bleach water sanitizer available in labeled spray bottles at 100 to 200 ppm chlorine. - Low temperature dishwasher measured 45 degrees C and 50 to 100 ppm chlorine in the rinse residual at the utensil surface. - General sanitation excellent. - Chemicals stored properly in designated areas. - No signs of pest activity observed. - FOODSAFE requirements met at time of inspection. Note: Previous routine health inspection report noted some unfinished shelving. All shelving is now smooth, non-absorbent and easy to clean.
