Observation (CORRECTED DURING INSPECTION): Operator aware that sushi bar requires bleach solution with multiple rags. Operator stated that it was busy throughout the day and had no time. Spray bottle with ~200 ppm of bleach solution was available at sushi bar station. However, for his usage and purposes for the rags, spray bottle is inadequate and require bleach solution in a bucket. More than 2 rags are required and must have the rags stored in the bleach bucket. Operator receptive
Corrective Action(s): Required operator to prepare a bucket with bleach solution ~200 ppm. Multiple rags were brought out and have them stored in the solution for continued use. Operator must continue this practice.

Observation (CORRECTED DURING INSPECTION): Rice scoop and dough mixer was left in staganant warm water. When probed, operator pointed out what he had to do but stated he was busy.
Corrective Action(s): Required to regularly replenish ice to ensure that re-usable utensils are not left unattended in warm stagnant water. Operator changed the utensils and replenished ice upon inspector's arrival.

Observation: Overall organization and cleaning still required. Main cooking area and sushi bar is okay but other locations such as dishwashing area, hard to reach areas need attention.
Corrective Action(s): Required operator perform overall cleaning of the facility to ensure that sanitation level is up to standards.

Follow inspection for JPAK-BTPLHA

Backdoor closed at the time of inspection. A few unwanted items removed from dishwashing pit. Discussed cooling procedure with operator; limited space for cooling. Operator must provide adequate counter space for cooling process.

Another follow up will take place Sep 29.2020. Operator must be able to show improvement otherwise progressive enforcement will follow. Operator receptive.
