Observation (CORRECTED DURING INSPECTION): The milk cooler measured 6.9C. Observed buildup of ice on the interior of the cooler.
Corrective Action(s): Move all dairy products to other working cooler. Dairy products that are in use may be stored in ice bath during operation until the cooler is able to maintain 4C or below. Defrost the cooler to remove the buildup of ice and have the cooler repaired if necessay. Do not put potentially hazardous foods (dairy) in the cooler until the cooler is in working order.

- Handsinks are equipped with hot & cold running water, liquid soap and paper towels
- 200ppm QUAT sanitizer available in spray bottles
- High temp dishwasher achieved 77C at plate's surface
- Hot holding (soup) measured >60C
- Foods are stored in pest proof containers
- Foods are dated for monitoring
- Temperatures of refrigeration units, except the milk cooler, meet regulatory requirements (<4C for coolers, <-18C for freezers)
- Temperature log is in use
- Proper cooling procedure (cooked chicken) is being followed
- Observed frozen meat that had been delivered 30 minutes ago, according to the operator, thawing on a rack to be used immediately. Please ensure that thawing is done in a cooler if foods are not used immediately.
- No signs of pest activity noted at the time of inspection


ATTENTION:
- Sanitizer bottles shall be labelled to prevent misuse and/or chemical contamination of foods.
- Racks require cleaning.
