Observation (CORRECTED DURING INSPECTION): Chemical dishwasher had no detectable chlorine sanitizer. Sanitizer pail was empty.
Corrective Action(s): A minimum of 50ppm chlorine is required to properly sanitize equipment and utensils. Sanitizer pail was replaced and tested at 50ppm.

Observation (CORRECTED DURING INSPECTION): Staff member observed handling raw chicken followed by rinsing hands was water.
Corrective Action(s): Ensure hands are properly washed with soap and warm water to prevent potential cross contamination of foods.

Observation (CORRECTED DURING INSPECTION): 1) Scoops were stored inside ingredient containers.
2) A bag of onions was stored in the floor.
Corrective Action(s): 1) Ensure scoops are stored in a sanitary manner - handles may contaminate ingredient containers. Scoops were removed from the containers at the time of inspection.
2) Ensure foods are stored off the floor to protect foods from potential contamination. Onions were relocated at the time of inspection.

Comments

-Walk-in cooler was at 4C.
-Undercounter cooler was at 4C.
-Front cooler was at 7C (currently used for cream and staff lunches) - if cooler unit is used for the storage of potentially hazardous foods ensure it is serviced and is able to maintain 4C or less. If cooler unit is only used for non-potentially hazardous foods, cooler unit does not need to be serviced.
-Both kitchen freezers were less than -18C.
-Chest freezer was at -22C.
-Hot holding was greater than 60C.
-Handwash station shared with 2 compartment sink supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Bleach sanitizer tested at 200ppm and properly labelled.
-Sink plug available for 2 compartment sink for manual warewashing.
-Food storage practices have improved. Raw foods generally stored below and separately from ready-to-eat foods (a container of raw shrimp was stored above pineapples).
-Ice scoop stored in a sanitary manner.
-General sanitation good at the time of inspection.
-No signs of pests noted at the time of inspection.
-Washroom clean and sanitary.
