Food not cooled in an acceptable manner [s. 12(a)] (Observed a few containers of hot soup being cooled at room temperature before being transferred to the walk in cooler. The operator noted that the hot soup is usally left at room temperature for about 4 hours to reach ambient temperatuer before moving to the walk in cooler. Thie is not an acceptable cooling method.)

Comments

-Improvement in sanitation level of premises noted since previous inspection
-Spills have been cleaned in dry storage area. Damaged dry storage bins have been replaced.
-Soup broth was stored in walk-in cooler and on stove at >60C at the time of the inspection.
-Food safety procedures present to address preparation/cooling/reheating of soup. Continue to adhere to proper cooling and hot holding procedures.
