Observation:
Observed mice droppings along the base of walls in the production area and the back packaging area. Monthly monitoring service completed by Orkin Pest Company.
Corrective Action(s):
Increase monitoring services until mice are eliminated. Clean up the droppings and sanitize the area.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation:
1) The floor along the base of walls behind equipment, tables, and shelves has accumulated food and water. This will attract and harbor pests.
2) The lower shelves below preparation tables have accumulated dust and cobwebs. This is an indication that this area is not being cleaned on a regular basis, and will create an area that pests will harbor due to minimal cleaning or disturbances.
Corrective Action(s):
1&2) Increase the frequency at which these areas are cleaned. Move items away from the wall to access and clean the floor, and take everything off the lower shelves so they can be washed and sanitized.

307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
Observation (CORRECTED DURING INSPECTION):
The new stainless steel table, in the production room, has the original protective plastic on the lower shelf. The plastic is not cleanable.
Corrective Action(s):
Peel off the protective plastic and expose the cleanable stainless steel. This was corrected during the inspection.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation:
1) The waste pipes under the 3-compartment sinks in the production area and dishwashing area are leaking. The pooling water will attract pests and supply them with a drink.
2) The floor has exposed cement as the paint has worn away. The floor is not sealed and uncleanable, this will allow foods to absorb into the floor and attract pests.
Corrective Action(s):
1) Repair or replace the broken pipes so they no longer leak. Wash the pipes and undersides of the sink basins to remove accumulated water and food debris.
**Correction date: Jan.15/18**
2) Reseal/repaint the floor so it is smooth, sealed, cleanable, and non-slip.

Observation:
The premises has unused/broken equipment, extra boxes/containers, and items not used to run the business being stored in the premises. These items have not been moved in a long time as there are cobwebs on them. These items create an area where pests will live in as they are not disturbed or moved.
Corrective Action(s):
Declutter the premises, remove and discard all unused/broken equipment, extra boxes/containers, and items not used to run the business.

Comments

A routine inspection was conducted, the following observations were made:
- Coolers 4C or colder; freezers -20C or colder; thermometers present; and temperatures recorded.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- Sanitizer in spray bottle and dishwashing sink had [Cl2] of 100ppm.
- Proper cooling procedures followed. Foods cooled at room temperature prior to placing in cooler. Ice wands then placed in inserts to increase the cooling step and bring it down to 4C. Temperatures are record.
- Sanitation level is satisfactory. Improvement needed in the mentioned areas. Have the exhaust canopy professionally cleaned to remove accumulated dust and grease from the interior surfaces of the exhaust stack.
- Hair nets worn, white coats and disposable gloves worn by staff and used correctly (gloves removed after completing a task and new ones put on when switching to another task).
- Foods stored 6" off the floor on pallets or shelves; foods stored in food grade containers; labeled; date coded; and batch numbers kept for traceability.
- Foods stored in groups to prevent cross contamination, and raw proteins stored separately or below RTE foods.
- No expired foods for sale or in use.
