Coolers are at 4 C or colder - good.
Hot holding is >60 C - good.
Cooling of hot foods - reviewed procedures. Ice water bath is used.
Reheating of cold food - is done on stove top (to 74 C within 2 hours).
Hand washing stations have liquid soap and paper towels. Keep food and items away from soap dispensers so soap can be used easily.
Food Safe - reminder that certificates expire after 5 years and can be renewed by taking an online refresher course.
Quats in spray bottle - concentration is at 200 ppm.
