Observation: Ice Scoop observed to be cracked and chipped. This is a physical health hazard as chipped plastic could potentially end up on ice or in the ice bucket.
Corrective Action(s): Repalce the ice scoop with a new one.

Comments

Routine inspection
- Hand washing stations are fully supplied with hot/cold running water, liquid soap and paper towels in dispenser. All paper towel dispensers are to be stocked.
- Chlorine residue 50 ppm detected in final rinse of Low-Temperature Dishwasher. Chlorine test strips available. (Required range of chlorine residue in DW final rinse water is 50-100 ppm). Washing and sorting dishware observed to be properly done. DW monitoring log maintained.
- QUAT sanitizer measured 200-400 ppm in spray bottles. Spray bottles are labeled properly. QUAT Test strips available.
Temperature control
- Walk-in cooler was at or below 4C. Walk -in freezer was at or below -18C. Temperature monitoring log maintained and kept updated.
- Hot holding units measured at or above 60 C.
- Food internal temperature observed being measured with probe thermometer. In reheating process, soup temperature heated to or above 74 C was properly reached. Staff observed to measure the temp using probe thermometer.
General sanitation:
- Floor particularly underneath equipment and in hard to reach areas were observed to be maintained clean and free from build-ups.
- All cooling units observed to be clean and maintained in good working order.
- No obvious sign of pest activity observed at this date.
- Shelves observed to be clean and organized. food stored at least 6 inch above the floor.
- Ice machine was clean and free from build-up inside the ice maker. Ice scoop stored in a sanitary container out of ice bucket. ( See notes above regarding ice scoop)
- Food contact surfaces kept clean and free from food build ups, dust and debris.

No structural concerns noted at this date. Kitchen lighting observed to be adequate. Kitchen ceiling was clean and ceiling tiles are in good working.

Reminder: Ensure to obtain health permit updated sticker and post the health permit in a conspicuous location.
