Observation (CORRECTED DURING INSPECTION): Sanitizer was not available at the time of inspection. Spray bottles available but no sanitizers inside them. Operator made bleach water 100-200 ppm solution at the time of this insection and provided in front and in kitchen for use.
Corrective Action(s): Enure to refresh the bleach-water sanitizer every two days or as needed. 1 cap full of unscented house hold bleach in 4 Litre (1 Gallon) of water. Ensure to test with paper test for the 100-200 ppm. If strong dilute with coldwater.
Safety note: Do not mix detergent with bleach for dish washing.

Observation: 1- Pizza dough cooler with stainless Steel counter top observed retrofitted with inserts. No proper lid available. Also, plate under the inserts is loose and dangling over the food underneath. This may introduce contaminants falling into the food below.
2- pizza prep table does not have proper lid to cover the food in inserts.
Corrective Action(s): Provide proper lid over the inserts. Ensure the plate underneath extend all the way to the end so that food below is protected from contaminants. Ensure also temperature in inserts reaches at or below 4 degree C.

Routine inspection

- Hand washing stations supplied and maintained.
- All cooling units measured at or below 4C. Freezers measured at or below -18C. Walk in cooler measured at or below 4C. Organizing Food and separation of raw/ cooked food discussed.
- Pizza Hot holding is to be less than 2 hrs.
- General sanitation is overall good. Dishware washing discussed with the operator and staff. clean and sanitize customer area max. after 4 hours and during rush time.
- Sanitizer available(see violation note above)
- Back door equipped with screen. No obvious sign of pest activity noted at this date.
- Lighting noted adequate.

- Food safe training course recommended for all staff.
