-Ensure that the hot chocolate machine is cleaned regularly. It is starting to build up hot chocolate powder. All coolers were < 4 C. All freezers were < -18 C. No evidence of pests. Traps in place. Back sink supplied with hot and cold water, soap and paper towels. General sanitation was satisfactory.
