- Hand washing sinks were accessible/unobstructed and properly supplied with hot and cold running water, liquid soap, paper towels.
- Bleach sanitizer solution available available at 100 ppm to 200 ppm (chlorine residual).
- High-temperature dishwasher reached 73C at the dish surface during rinse cycle. Good, minimum of 71C required.
- Two-compartment sink maintained in sanitary condition.
- Coolers measured 4C or less.
- Freezers measured -18C or less.
- Hot-held rice and miso soup at 60C or hotter.
- Sushi rice held at room temperature is acidified (less than 4.2 pH).
- Food preparation sink maintained in sanitary condition.
- Food storage practices satisfactory. All food stored properly covered/protected from contamination. Good separation between raw and ready-to-eat items.
- Dry storage areas satisfactory. *Ensure to keep dry storage area(s) organized and de-clutter as needed.
