Met with Kitchen Manager and discussed the following: - pest control - in place - daily temp logs up to date - bar glass washer - supplied with iodine at 12.5ppm - high temp dishwasher reached 71C at the plate - bleach used as approved sanitizer/ in the spray bottle, test strips are available for daily monitoring The following need your attention: - janitorial facility - to be organized so all staff is aware of clean and dirty side in the kitchen ( bucket to be refilled and gray water discarded in the staff washroom, instead in the kitchen )
