Observation (CORRECTED DURING INSPECTION): Single use paper towels not available at the bar hand washing sink. It was replenished at this time.

Observation: Fruit fly activity noted at the bar area.

Observation: Dual mode dishwasher (high temperature and chlorine sanitizer) was not sanitizing food contact surface effectively. Highest temperature recorded at 66C and 0ppm bleach detected at the plate level. The manager contacted a technician to service the dishwasher. The manager prepared manual dishwashing method (use dishwasher to wash and sanitize using 200 QUATs in 2 compartment sink) at this time.
Corrective Action(s): Service the dishwasher. Correction order issued at this time. Correct this by: immediately.

Routine inspection conducted:
Hand washing stations fully equipped with hot and cold running water, liquid soap and paper towels.
All coolers measured at 4C or less.
All freezers measured at -18C or less.
In use utensils stored in ice.
Foods held in ice is time tracked for 4 hours use.
No sign of recent rodent/cockroach activity noted at this time. Small fruit fly activity noted in the bar area (See violation section).
Glass washer measured at 12.5 ppm iodine.
Ice machine in sanitary condition.

Correction order issued at this time.
Follow up inspection to be conducted on September 6, 2022.
