Observation: Several cold potentially hazardous food identified in the island cooler were measured at 11-12C. Manager onsite was unsure when temperature of cooler started reading over 4C.
Corrective Action(s): Discard cold potentialy hazardous food such as tofu, pasta, hummus, cut fruits/vegetables immediately. Keep receipt of items discarded for review. Cold potentially hazardous food must be stored at 4C or colder.
