Observation (CORRECTED DURING INSPECTION): The spray bottle with bleach sanitizer had a chlorine concentration less than 50ppm.
Corrective Action(s): Bleach sanitizer shall have a concentration of at least 200ppm. For a 1 litre spray bottle filled with plain water, use 1/2 oz of unscented household bleach. Staff corrected violation at time of inspection.

210 - Food not thawed in an acceptable manner [s. 14(2)]
Observation (CORRECTED DURING INSPECTION): Two turkeys found thawing at room temperature.
Corrective Action(s): At time of inspection, two turkeys were found sitting in buckets at room temperature. Operator indicated they were brought out from the freezer earlier in the morning to thaw. Operator said the turkeys will be cooked the following day. Both turkeys had a surface temperature of less than 4-6 degrees Celsius, and only the surface (approximately less than one half inch deep) had thawed. Frozen foods shall never be thawed a room temperature as this may allow bacteria to grow on and in the food. Thaw frozen foods by keeping them at 4 degrees Celsius or less in a cooler or under cold water. Instructed operator to move the turkeys into the walk-in cooler.

Observation (CORRECTED DURING INSPECTION): Cardboard lining the wall and counter behind and under the waffle grills were very greasy.
Corrective Action(s): Operator uses cardboard to line the wall and counter behind and under the waffle grills to help keep these areas clean. The greasy Cardboard shall be replaced everyday and the wall and counter shall be cleaned and sanitized every time the cardboard is changed. Accumulation of grease in food preparation areas can attract pests. Operator corrected at time of inspection.

General observations:
All back of house coolers (walk-in and prep) were 4 degrees Celsius or less.
All front of house coolers (pop, dessert and prep) were 4 degrees Celsius or less.
All freezers (walk-in and small chest freezer in kitchen, and dessert freezer in servery) were -18 degrees Celsius.
Food storage practices were satisfactory - except as noted above.
Organization of storage areas was average.
All hand wash sinks in the front and back of house were stocked with liquid soap and paper towels.
All sinks were equipped with hot and cold running water.
Food handler hygiene and food handling practices appeared satisfactory.
General sanitation was satisfactory.
Bleach sanitizer for in-use wiping cloths had a chlorine concentration of 200ppm.
Low temperature dishwasher had a chlorine sanitizer residual of 100ppm.
Chemicals were stored in a safe manner.
No signs of pests observed.
