Observation (CORRECTED DURING INSPECTION): Inserts of fish cake stacked on top of other inserts filled with food (bottom insert lid closed). Fish cakes temperature measured to be at 12C. Fish cakes were moved into the prep cooler at store opening (1 hour ago).
Corrective Action(s): Operator relocated fish cakes to cooler at the time of inspection. Ensure you do not stack inserts of food ontop of other inserts as the cold air does not reach the upper insert leading to potentially hazardous food being stored above 4C.

1) Raw eggs observed to be stored ontop of ready-to-eat items in the walk in cooler.
2) Greenish build up observed inside ice machine.
Corrective Action(s): 1) Ensure raw proteins are stored at the bottom shelf to prevent cross contamination.
2) Discard ice in the ice machine, clean and sanitize the ice machine prior to operating ice machine again.
