Observation (CORRECTED DURING INSPECTION): Several trays observed still wet stacked one on top of each other. The stacked wet trays were removed and brought back to the 3 compartment sink.
Corrective Action(s): Trays must be thoroughly air dried before stacking

Observation: Food product build up still observed on the meat cooler slider doors.
Food splatter build up still observed on bottom portion of Tumbler Unit.
Corrective Action(s): As discussed with Manager, due to low light conditions ensure a flashlight is available to verify daily cleaning have been done properly.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: Suitable space to allow proper air drying of trays observed to be not present in the meat department.
Several wire rack shelving inside the walk in meat cooler observed to have buckled and bottem shelving too low to the floor.
Corrective Action(s): As discussed with store Manager, install wire rack shelving above the 3 compartment sink. This will provide the space to allow trays to properly air dry
Manager stated the damaged shelving is in the process of being replaced and when replaced the bottom shelving will be at least 6 in up off the floor.

Observation: Floor observed damaged in front of meat dept walk in cooler.
Corrective Action(s): This will need to be addressed over the next few months and repaired to prevent a tripping hazard.

Observation: Tumbler unit observed with food splatter build up
Heavy food spillage/splatter build up observed on meat dept display cooler slider doors as well as inside all the units.
Handles on cooler doors observed with food product build up.
Correction: Clean as directed. Review daily cleaning responsibilities with staff
High touch surfaces such as handles are to be cleaned and sanitized daily.

Observation: No soap observed in soap container at 3 compartment sink.
Trays observed not being properly air dried before stacking one on top of each other.
Trays observed with food debris still affixed in "clean storage area"
Correction: Rewash all utensils. Ensure staff are trained on how to properly warewash. This infraction has beed noted on previous inspection reports.
Comments

***Lower temperature of quat sanitizer dispensed in the sanitizing sink in the meat department. Hot water will rapidly diminish the strength of the sanitizer. Ideal temperature is around 75F to 80F or 25c to 30c.
***Ensure the revised "Cleaning Standard" document for Meridian Meats adequately addresses "Accountability" to ensure cleaning procedures as outlined in the document are being followed.
Meat tray storage now on bottom shelving below table the tumbler unit is located on.
Deli cooler and underside of shelving cleaned.
Soap container full at 3 compartment sink. Ensure staff keep an eye on soap and sanitizer levels as discussed with store Manager.
Spilled food cleaned on floor under wire rack shelving.
Tumbler unit (Top side) replaced.
