Observation (CORRECTED DURING INSPECTION):
- QUAT sanitizer in spray bottles had no detectable QUAT from the test strips.
Corrective Action(s):
- Sanitizer from source measured 200ppm QUAT. All bottles were replenished with fresh sanitizer at the time of inspection. Ensure to replenish the sanitizer regularly (eg. every 2-3 days) and check for air gaps in the dispenser tube. Prime the dispenser if air gap is observed.

Observation:
- Food debris observed on the mixer machine upstairs. Ensure to thoroughly clean the machine immediately after use.
- Plumbing fixtures above the double compartment sink are soiled.
Corrective Action(s):
- Clean and sanitize the mixer.
- Clean the walls & pipes that are soiled.

Comments

- All handsinks are fully equipped.
- All coolers at 4C or below.
- All freezers at -20C to -32C.
- High temperature dishwasher reached 71C or above during the final rinse.
- Vent hood panels in sanitary condition.
- Ice machine in sanitary condition. Scooper stored inside a container, separated from ice.
- Last pest control service (Atlas Pest Control) done in 2022 August. No activity is reported and next scheduled inspection is in Feb 2023. No signs of pest observed at the time of inspection.
- Hollandaise sauce at 40C. This sauce was previously approved for holding under 60C after lab test verification of its pH being under 4.1. No change in recipe as per the operator.
- No hot holding observed at the time of inspection as it was nearly closing hours.
