Observation: Operator stated he completed a FOODSAFE Level 1 equivalent course approximately 10 days ago. Operator did not have verification of successful completion of course.
Corrective Action(s): While facility is in operation, at least one person in the establishment must have FOODSAFE Level 1 or equivalent training. Ensure copies of FOODSAFE Level 1 equivalence is maintained on-site of staff have digital copies of FOODSAFE equivalent training.

Comments

-Walk-in cooler was at 4C.
-3 prep coolers were at 4C (top and bottom).
-Upright freezer was at -15C.
-Hot holding was greater than 60C. Foods cooked to greater than 74C prior to hot holding.
-High temperature dishwasher had a final rinse temperature of 76C on the dish surface on consecutive cycles (minimum of 71C required for proper sanitizing).
-Quats sanitizer dispenser was tested at 200ppm. 3-compartment sink prepared with 200ppm Quats sanitizer.
-Sanitizer spray bottles and pails were labelled and tested at 200ppm.
-Handwash stations accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Equipment was found to be clean and sanitary. Dicer properly washed and sanitized after each use.
-Tongs and knives stored in ice.
-Ice machine was clean and sanitary. Ice scoop stored in a sanitary manner.
-General food storage practices good at the time of inspection. Foods stored off the ground and protected from potential contamination.
-General sanitation good at the time of inspection.
-No signs of pests noted at the time of inspection
-Washroom clean and sanitary. Handwash station supplied with liquid hand soap and single use paper towels.
-Health Permit hand delivered to operator. Ensure permit is posted at a visible location. Contact the Health Department if any changes are made to the facility (see attached letter).
