Observation (CORRECTED DURING INSPECTION): 2 comp sink used also as handsink has hot & cold water, paper towel and instructions how to handwash but no hand soap. It appears the handsink dispenser has been removed off the wall.
Corrective Action(s): Ensure all handsinks are supplied with hot & cold water, liquid soap and paper towel.

Observation: 1.Mouse droppings noted in processing room in corners
2. Mouse droppings and bedding (white chewed foam) noted in walk in cooler along edges

Corrective Action(s): Ensure all mouse droppings and bedding are cleaned up and noted. Report all pest activity to pest control technician.

2. Spilled dry ingredients, chocolate and syrups not cleaned up after being cause on the same day

Corrective Action(s): 1.All doors between the warehouse, packing rooms, and storage rooms must be kept closed.
2.All spilled dry ingredients and syrups must be cleaned up daily to prevent potential pest attraction.
3.Ensure that door sweeps are properly installed and in good condition.
Correction date: 1 week
4.Seal all holes/gaps in walls/floor joints. Operator is installing stainless steel "L" pieces along the floor/wall joint. Job is currently incomplete.

Corrective Action(s): Thoroughly clean above mentioned areas. Ensure that all areas of the facility are thoroughly cleaned regularly as per your sanitation plan.

Observation (CORRECTED DURING INSPECTION): Cardboard used to cover stainless steel container of peanut butter and spatula.
Corrective Action(s): Cardboard is not a suitable food contact surface. Acceptable materials must be durable, smooth, non-absorbent and easy to clean.
Cardboard is still use in high spill zones to soak up debris/spills on the floor - must be discarded daily to prevent attracting pests.

Sanitizer sprays used was 70% isopropanol for food processors - checked original bottle - use as per instructions on label
Walk in freezer : -16 C
Walk in cooler : 10 C - no potentially hazardous foods inside - only shelf stable foods
High temp dishwasher noted: 72 C at plate
Pest control service provided by Terminix twice a month
***Last note in Pest Sighting Log is Dec 4. There is pest activity noted during inspection - ensure log is regularly updated
***Last pest control report noted Jan 4, 2018 - some activity noted at 5 devices - 4 mice removed. Ensure all droppings are also cleaned up to allow for accurate monitoring of activity
***Follow any recommendations provided by pest tech
