Observation (CORRECTED DURING INSPECTION):
- Dead fish observed in the fish tank.
Corrective Action(s):
- Do not serve & discard the dead fish. Ensure to maintain the water quality and the sanitation of the fish tank. Staff should be inspecting the tanks every morning and discard any dead fish.

Observation:
- Observed two knife compartments with food debris. Knives in general had food debris and oily residue as well.
- Biofilm observed inside the ice machine - by the cover panel of the ice making compartments.
Corrective Action(s):
- The knives and knife compartments were cleaned at the time of inspection. Ensure to clean & sanitize tools that come into direct contact with food before putting them away for later use.
- Clean and sanitize the ice machine after turning the machine off and all ice has been emptied out. Date to be corrected by: Today.

Observation:
- Dishes from the night before was present in the dishwashing area.
- Dust build up observed on the fans located in the dishwashing area.
- Grease build up observed in the kitchen ventilation hood.
- Dust build up observed around the ceiling vents inside the kitchen, and on the fan covers inside the dimsum walk-in cooler.
- Food residues observed on the drain boards in the dishwashing area.
Corrective Action(s):
- Clean the areas noted above.
- Ensure to finish doing all the dishes before closing. There shouldn't be dirty dishes with food residues left over night.
- Drain board should contain 'cleaned' dishes only after they go through the dishwasher. Ensure to keep this area clean.

All coolers at 4C or below.
All freezers at -10C to -18C.
Hot holding at 60C or above.
High temperature dishwasher reached 71C or above during the final rinse.
Bleach sanitizer measured at 100ppm in buckets.
Glasswasher reached 54C and final rinse water read 50ppm chlorine.
Manager on duty with valid foodsafe level 1 certificate.
Biweekly pest control by Ecolab. Report was reviewed and no issues reported.

Improvement observed in overall sanitation compared to the previous routine inspection. Continuous effort to clean certain equipment (ice machine, fans, knife compartment etc.) in regular basis is required.
*Equip a working thermometer inside the kitchen walk-in freezer.
