308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)] Observation: Viking Eatons refrigerator observed to be not properly cold holding due to being opened and closed on a frequest basis. All potentially hazardous food items were relocated to the commercial refrigerator and non potentially hazardous food items (Pop) were relocated from the commercial refrigerator to the non commercial refrigerator. Filter on the commercial refrigerator heat exchanger observed to be heavily inpacted with dust. Corrective Action(s): Recommend either solely storing non potentially hazardout food items in the Viking/Eatons fridge or upgrade the fridge with one that is capable of consistently cold holding at <4c with the demands of being opened and closed frequently.
