Observation (CORRECTED DURING INSPECTION): Noted a large pot of food (mirza ghasemi) being cooled at room temperature (temp 35 oC been stored >2 hrs)
Corrective Action(s): Use ice water or ice wand to cool down the food to <4 oC .Follow proper cooling procedure as stated in the FoodSafety plan.

Observation (CORRECTED DURING INSPECTION): Saffron cooked rice noted at room temperature at 35 oC NOT maintained hot at >60 oC- stored more then 2 hrs- discarded
Corrective Action(s): Keep all hot potentially hazardous foods at = >60 oC at all time.

Observation: Noted several foods without proper protection: (opened bag of flour, opened can of chickpea, can of dolmeh...)
Noted serving spoon inside food with handle touching food (mashed garlic)
Noted ice scoop fully inside ice (hidden inside)
Noted raw chicken being cut beside cooked foods

Corrective Action(s): Ensure to keep all foods in sealed containers- after opening a can transfer the food in a sealed container, after opening a large bag of dried foods transfer the rest in a sealed bin.
Serving spoon- not to be stored inside food / handle touching foods, ice scoop to be stored in clean container outside the ice machine
-have a separte prep area for raw meat vs cooked foods or vegi

Temp of all cooler and freezer are satisfactory (<4 oC and <-18 oC)
-Accurate thermometers are provided
-Paper towel and liquid soap are provided at all sinks.
-Dishwasher chorine >50 ppm
-Bleach solution >100 ppm spary bottle-
*discussed using paper towel with spray bottle or keeping cloth towel soaked in sanitizer at all time.
* not able to verify pest free due to a lot of stuff stored on floor
-General sanitation was satisfactory except noted issues above.
-Ice machine was clean and free of mold
-Kebab skewers are in separate coolers .
* discussed proper glove usage with the staff - change gloves at any possible contamination wash hands between each change
* discussed separation of raw meat preparation and cooked foods- noted raw chicken being cut beside a pot of cooked food (mirza ghasemi)
* all cooked foods or processed foods to be properly labelled with date of prepartion

*No temp log sheet located on sit-eEnsure to monitor and record temp of all coolers, freezer, hot holding units at least twice daily-and sanitizer concentration in dishwasher and spray bottle/bucket at least once daily.
