Observation (CORRECTED DURING INSPECTION): Bucket of noodles observed to be soaked in water at room temperature. Operator informed it was soaking in water at room temperature for 2 hours. Soaking of noodles in water will allow noodles to be cooked easier at time of service.
Corrective Action(s): Transfer the bucket of noodles soaked in water in a cooler measured at 4C or lower.

Observation (CORRECTED DURING INSPECTION): Can opener blade observed to have built-up food debris.
Corrective Action(s): Clean and sanitize the aformentioned item. All can opener blade must be cleaned and santize after each use.

Observation (CORRECTED DURING INSPECTION): Spring rolls observed to be in small domestic cooler that is not covered and fully exposed to cooler environment.
Corrective Action(s): Transfer the spring rolls into a food-grade container and cover.

Observation: Built-up of debris observed underneath the stand-up coolers, freezers, and dry storage racks at the back kitchen area.
Corrective Action(s): Clean and sanitize the aformentioned area to prevent possible pest harbourage. Corrected by: 1 month.

Routine Inspection conducted today.

Handwashing sink well equipped with hot and cold running water, liquid soap, and paper towels.
Chlorine spray bottles at 200ppm. 2-compartment sinks available for food preparation and beside low-temperature dishwasher. Low-temperature dishwasher measured at 50ppm chlorine final rinse.
Prep coolers, undercounter cooler, stand-up coolers measured at 4C or lower. Stand-up freezer and chest freezer measured at -18C or lower. Hot-holding units measured at 60C or higher.
Food observed to be stored at least 6 inches off the floor.
Exhaust hood vents observed to be sanitary.

No signs of pests observed.

Overall, facility is well organized and clean.
