Observation (CORRECTED DURING INSPECTION): Beated egg to be used in making fried rice and fried noodles observed left out on the cooking line for the lunch rush.
Corrective Action(s): Store container of beated egg inside the lower section of the preparation cooler or in an insert. Ensure all cold potentially hazardous foods are stored at or below 4 degrees C.

Observation: In the walk in cooler, several food containers in the walk in cooler lacking lids or covers to protect food from contamination. Several food containers observed stacked one on top of another with no lids or covers. Several food containers observed stored on the floor.
Corrective Action(s): Ensure all food is protected from contamination. Cover all food containers with tight fitting lids, covers, or saran wrap. Do not store food containers on the floor. Store all food at least 6" off the floor. Correct immediately.

Observation (CORRECTED DURING INSPECTION): Frozen basa fillet observed thawing under the 2 compartment sink.
Corrective Action(s): Ensure all frozen food is thawed under cold running water or in the walk in cooler. Operator relocated the frozen basa fillet to the walk in cooler.
