**Check defrost cycle times - defrost cycle times may need to be adjusted so that defrost cycle does not occur during heaviest usage times (cooked products are placed in unit to freeze after cooking and cooling). Adjust unit temperature.

Observation: - Rodent droppings noted at floor/ wall edges in the following areas:
- Under/ behind storage shelving for cooking pots and food equipment.
- Under storage shelving for packaging (in loading bay area).
- Under shelving between walk-in cooler and walk-in freezer.
- Under microwave shelf.
Corrective Action(s): - Remove droppings and clean the above noted areas.
- Continue to monitor pest activity. Report new and/ or increased activity to your pest control company.
- Keep loading bay door closed when not in use.
- Ensure that all snap traps are properly activated so that they are effective.
- Ensure that all areas are accessible for pest control service.

- Handwash stations and staff washroom sink have liquid soap, papertowels, hot and cold water.
- Staff wear hairnets and uniforms in processing area. Uniforms appear clean.

- Walk-In Cooler: 4 deg C
- Daily temperature logs for walk-in cooler and walk-in freezer maintained.
- Retail Chest Freezer and Processing Area Chest Freezers: <-18 deg C
- Upright Freezer: -21 deg C
- Food storage practices appear satisfactory - storage is organized, food is protected from contamination.
- No food storage in mezzanine area - packaging supplies and miscellaneous storage only.
- Cooling procedures reviewed with operator at time of inspection. No concerns at this time.

- 200 ppm chlorine bleach sanitizing solution available for sanitizing food contact surfaces. *Ensure that continuously used surfaces are sanitized at least once every 4 hours.
- Low Temperature Chemical Sanitizing Dishwasher: 50 ppm chlorine residual. Chlorine test papers available to verify sanitizer concentration. Dishwasher log appears maintained on most days.
