* Only hot tofu dispensed at the time of the inspection. No cooking is being done on site.

- General sanitation is satisfactory.
- Main handwashing station supplied with hot/cold running water, liquid hand soap, and single use paper towels.
- Two compartment sink available for manual warewashing. Manager able to demonstrate proper two-comp warewashing method. Sanitizer available.
- Surface sanitizer stored in designated bin in the kitchen at 100ppm chlorine bleach concentration.
- Dry storage area has adequate space and wire racks.
- No signs of pest activity at the time of the inspection. A professional pest control company inspects the premises on a monthly basis. Pest control summary report available and reviewed at the time of the inspection.

Temperature control:
- Toppings stored over ice.
- Two insulated containers used to store hot tofu. Tofu measured >60C. Deliveries occur twice a day (am, pm).
