302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): 1) Bleach sanitizer solution in bucket for storing wiping cloths was at 0 ppm. Operator stated the solution is only changed once a day, and only one small drop of bleach is mixed in with the water.
2) Bleach solution in spray bottle for front server area was too strong and bleached out the test strip.
Corrective Action(s): 1) For the sanitizer bucket, add 1 capful of bleach for proper concentrations. Bleach solution in the bucket should be changed at least every 4 hours, or even sooner if the solution is visibly dirty. Ensure to store all wiping cloths in this solution when they are not in use. Operator prepared fresh solution; 100 ppm chlorine detected.
2) For the spray bottle, only add 1 tsp of bleach to a full bottle of water. Staff diluted solution in spray bottle at time of inspection.

Observation (CORRECTED DURING INSPECTION): Scoops were being stored directly in dry ingredients, with handles touching the ingredients.
Corrective Action(s): Do not store scoops in dry ingredient bins. Use scoops only as they are needed, and wash and sanitize through the dishwasher after each use.

Observation: Screen door for back door does not close properly; gap is present at bottom left corner.
Corrective Action(s): Fix screen door so that it closes properly and no gaps are observed.

Observation: 1) Ventilation hood baffles have accumulated grease
2) Floors in corners and underneath/behind all equipment have accumulated grease and food debris
Corrective Action(s): 1) Clean and sanitize baffles more regularly to prevent build-up of grease
2) Pull out all equipment to ensure floors can be properly cleaned. Thoroughly clean under and behind equipment at least once a week.

- Hand sink in front was supplied with hot and cold running water, liquid soap, and paper towels. *Ensure all hand washing sinks have liquid soap and paper towels
- Both prep coolers were at 2-3C; sliding glass door cooler was at 4C; 3-door cooler was at 3C; cooler at front was at 3C
- Two chest freezers in back and freezer storing ice cream in front were below -18C
- Dishwasher had 100 ppm chlorine detected after final rinse cycle
- Food stored in coolers were covered
- Equipment maintained in sanitary conditions (ice machine, cutting boards, knives, etc.)
** Dry storage area and back area need to be cleaned and re-organized
