Routine inspection conducted due to ownership change:
- Coolers below 4C; freezer was -20C; hot holding unit above 60C; and temperatures recorded daily.
- 3 comp sink used for ware washing. Soap, Quats and bleach present.
- Bleach sanitizer in spray bottles had [cl2] of 200ppm.
- Quats ammonia sanitizer had 200ppm strength.
- Hand sinks stocked with liquid soap, paper towels, and running hot + cold water.
- Floor plan approved; SP approved; FSP needs revisions.
- FoodSafe certified staff present.
- New floor installed.
- General sanitation level is good.
- No signs of pests. Screen door present on back door.
- All foods stored in food grade containers; covered; labelled; date coded; stored in groups with proteins below RTE foods; and food stored 6" off the floor.
- No expired foods for sale. FIFO rule being followed.
- Cheque for permit fees obtained for 2019-2020 and 2020-2021.
Corrections to be done
- Place wiping cloths in a bucket of bleach + hot water (sanitizer). Change the solution every 2-3 hours.
- Paint all raw wood to seal it, so it can be properly cleaned.
- Prep tables, by the walk-in-cooler door, must be moved every week to clean under them.
