Observation: Rodent droppings were observed in the following areas:
- underneath ice bin at front
- underneath hot holding unit

Food stored in pest proof containers. Professional pest control company contracted. Traps in place.
Areas shown to Vice President at this time. Photographs taken by the VP.
Corrective Action(s): Ensure to have the above areas cleaned by the cleaning crew on a regular basis as discussed at this time.

Routine inspection conducted:

- Handwashing stations adequately supplied with liquid soap, paper towels and hot/cold running water.
- Coolers operating at/below 4'C; Freezers operating at/below -18'C.
- Hot-holding units operating at/above 60'C.
- 200ppm chlorine available in labelled spray bottles throughout.
- High temperature dishwasher achieved 73.4'C at the plate level after final rinse.
- Food storage practice satisfactory throughout.
- Tools in drawers maintained in sanitary condition.

General maintenance and sanitation level satisfactory, except mentioned above.
