-Coolers are below 4 degC
-Freezers are below -18 degC
-Dishwasher rinse temperature is 73 degC at plate level
-Hand sinks are fully equipped
-200ppm bleach is available on-site
-Sushi rice pH is close to 4 (tested with the test strip). Provided information on sushi safety to operator.
-There's a condition on the permit for no frying/grilling. Condition was lifted back in 2012 but not changed on HS. Operator is permitted to grill/fry.
