Observation: 1. Dried on food soil noted on the deli slicer.
2. < 10 PPM chlorine residual detected in the sanitizer container holding in-use wiping cloths.
Corrective Action(s): 1. Disassemble the meat slicer. Clean, rinse and sanitize all parts to ensure no food soil remains on this equipment prior to storing away.
Date to be corrected by: Today or if using today, must be thoroughly cleaned and sanitized prior to use.
2. **Issue corrected at the time of inspection** Staff prepared a new mixture of bleach sanitizer solution. 200 PPM chlorine residual detected.

Observation: 1. Some of the food in the walk-in cooler was stored with no protection - covers/ lids/ plastic wrap, etc.
2. Total of 4 light fixtures in the food preparation areas were noted with no light covers.
Corrective Action(s): 1. Cover all food in the walk-in cooler or cooler units that are not in active use.
2. Replace missing light covers/ purchase individual protective light bulb sleeves or change out the bulbs for break-resistance bulbs (e.g. LED light bulbs) to prevent accidental breakage where shattered pieces may become a contaminant to food.

Observation: About 5 or so fresh mouse droppings noted on the floor by the back door.
Corrective Action(s): Clean, sweep and sanitize the abovementioned area. Work with you pest control company to address the pest issue.

305 - Conditions observed that may allow entrance/harbouring/breeding of pests [s. 26(b),(c)]
Observation: Screen door noted not properly flushed to the door frame, leaving a large gap where pests may enter the facility.
Corrective Action(s): Immediately close the back door until the screen door is repaired. Screen door must be flushed to the door frame to prevent entry of pests into the facility.

Observation: Front of house sweet display cooler was noted with an internal temperature of 9.0C. However, no cold potentially hazardous food items were stored in this unit.
Corrective Action(s): Staff is aware of issue and therefore is not storing anything cold potentially hazardous in this unit. As per staff, operator is awaiting for a part to fix this unit. Continue to not store anything potentially hazardous in this cooler unit until it is able to maintain an internal temperature of 4.0C or below.

Observation: Cardboard noted being used as liners for the shelves holding pots and pans besides the 2-compartment sink and 5 shelves rack.
Corrective Action(s): Remove all cardboard that is being used as liner. All surfaces in a approved food premises must be imprevious to moisture and easy to clean and sanitize.

Routine inspection conducted today:
Handwash stations, including staff washroom, accessible, equipped with hot and cold running water, liquid soap and paper towel.
All refrigeration units were at 4.0C or below (except unit noted in the violation above).
All freezer units were at -18.0C or below.
Proper storage hierarchy noted in the walk-in cooler.
Door seal for the walk-in cooler noted fixed (issue noted during the last routine inspection).
Pizza hot holding unit was at 67.0C.
2 drain plugs available for the 2-compartment sink for manual warewashing.
Canned goods noted in good condition with no dented/ damaged cans observed.
Cleanliness around the fume hood and deep fryer noted satisfactory.
No improper dispensers stored within and used for bulk food containers.
Staff has a valid FOODSAFE level 1 certificate - expires March 26, 2027.
