Observation: High temperature dishwasher observed not functioning. Operator was aware of issue and attempted contacting maintenance companies. A two compatment sink is present. Given the large volume of dishes and ongoing food prep throughout the day, adequate sanitation cannot be achieved.
Corrective action: Repair/replace the mechanical dishwasher and ensure a minimum of 71 deg. C on plate surface in final rinse.

Observation: Raw (frozen) meat was observed resting on dry goods in the bottom rack. Operator stated that the meat was not thawing. There is risk of cross contamination and transfer microbes from raw meat to dry goods. Corrective action: Do not store raw meat on top of ready to eat food. Ensure frozen meat is thawed either under running cold water, in the cooler, or microwave.

304 - Premises not free of pests [s. 26(a)]
Observation (CORRECTED DURING INSPECTION): Mouse droppings were observed around containers/bags of flour, sugar and other dry goods. One of the packages was broken. Pests can transmit disease and measure must be taken to eliminate them.
Corrective action: discard broken bag of flour. Ensure all of the dry goods are stored in pest proof containers.
Clean/sanitize the contaminated surfaces (Chlorine @ 100ppm/QUAT @ 200ppm)

Observation: Significant grease and food debris build was observed on the ceiling tiles. There is potential for debris to fall back into food being prepared directly below.
Corrective action: Clean/sanitize the ceiling tiles. Ensure deep cleaning of all hard to reach areas is done on a regular base.

*Rags were observed on food prep surfaces --> ensure they are stored in sanitizer solution (QUAT @ 200ppm) when not in use
*Some food debris accumulation inside reach in/under counter coolers --> deep clean.
*Ensure the concentration of QUAT sanitizer is monitored regularly
