Observation (CORRECTED DURING INSPECTION): Shredded cheese stored in base of prep cooler at approximately 7C.
Corrective Action(s): Aforementioned items were placed in the walk-in cooler. Adjust or repair prep cooler so that it reaches 4C or below.

Observation (CORRECTED DURING INSPECTION): Items inside drawer underneath magnetic knife holder including knives, knife sharpener, can opener are not in sanitary condition. Operator claims that they are not used.
Corrective Action(s): Aforementioned items were run through the dishwasher at time of inspection. All equipment in food premise must be in sanitary condition. If they are not used, then remove them from the premise.

Observation: Mini stainless steel coolers at front of kitchen at approximately 10C at time of inspection.
Corrective Action(s): Adjust or service both prep cooler and stainless steel coolers so that they can maintain 4C or below.

Comments

Routine inspection conducted. The following observations were made:

1. Temperatures
- Walk in cooler at 3C
- Front display cooler at 4C
- Front mini cooler at 10C (see violation code above)
- Chest freezer and all stand-up freezers at -18C
- Pizza prep cooler at 7C, then later reduced to 4C after cooler was adjusted. Reminder: Keep the lid CLOSED when not in use.
- Hot-holding unit on at time of inspection, and reached approximately 70C (Min: 60C)
- Front-of-house stainless steel coolers at 9C (see violation code 308 above)

2. Hygiene and Sanitizing
- Handwash station adequately stocked with hot/cold running water, liquid soap, and single-use paper towels in restroom and kitchen
- Restrooms well maintained
- Sanitizer spray bottle contains 200 ppm quaternary ammonium compound (quats). Operator has opted to use only quats to sanitize food contact surfaces.
- Low-temperature dishwasher releases 100 ppm chlorine residual in final rinse cycle [at the plate]
- Ventilation slats are generally well maintained
- Knives and magnetic knife holder in sanitary condition

*Reminder: Please clean-in-place the dough presser at the end of the day.*

3. Storage
- Food items stored at least 6" off the floor. Some sauces and containers in walk-in cooler elevated by pallets
- Items in coolers generally covered with tight-fitting lid
- Reminder: All raw foods should be kept separate from cooked and ready-to-eat food
- Dry storage area contains bulk goods such as flour, covered with a food-grade container

4. Pest Control
- No visible signs of pest activity at time of inspection

5. Administrative
- Permit posted and up-to-date
- Operator has FoodSafe 1

A follow-up inspection will occur to ensure that coolers reach 4C or cooler. Refrain from storing any potentially hazardous foods in the cooler until a follow-up has been done.
