304 - Premises not free of pests [s. 26(a)]
Observation: Rat dropping noticed in the following areas of the restaurant:
-Udnerneath the stairs in the dry storage area
-Behind plastic storage totes in the shelving areas
-Behid the deep freezer
Pictures taken.
Corrective Action(s): -Hire a licensed pest control company to initiate immediate monitoring and control and submit an inspection report by Feb 5, 2019.
- Throw out any food items in the dry storage room that were not kept tighlly covered.
- Inspect all areas of the restaurant especially in the dry storage room, behind the deep freezer, all white wooden storage shelves and behind the sliding door cooler, underneath and behind the cook line and behind the 3-door freezer and underneath the dishwashet and remove all droppings. Clean affected floor and surfaces with hot water and bleach.
-All food items must be kept covered in bins with tight fiitting lids
-Seal or patch any holes on the exterior of the building
( to be completed by Feb 6, 2019).

Observation: Lack of organizing and cleaning in dry storage room, dishwasing area and cookline can provide conditions suitable for rodent harborage
Corrective Action(s): Clean all of the above areas to remove caked on grease and food debris by Feb. 6, 2019.

Observation: Build-up of food debris, grease and dirt noticed underneath the dishwashing area, behind and underneath the cookline.
Corrective Action(s): Clean and sanitize floors and other surfaces in above areas thoroughly by Feb. 2, 2019.
