Observation: Build up of mould noticed on some shelves in walk-in cooler and the fan cover in walk-in cooler. Slime build up noticed on the bottom of the beer keg coler
Corrective Action(s): Clean the interor and exterior of all coolers, cooking equipment and dishwashers thoroughly. ( Feb 6, 2019).
Clean the interior of the bar cooler.
Clean shelving in all coolers.

Observation: Rat dropping noticed in the following areas of the restaurant:
-Udnerneath the stairs in the dry storage area
-Behind plastic storage totes in the shelving areas
-Behid the deep freezer
Pictures taken.
Corrective Action(s): -Hire a licensed pest control company to initiate immediate monitoring and control and submit an inspection report by Feb 5, 2019.
- Throw out any food items in the dry storage room that were not kept tighlly covered.
- Inspect all areas of the restaurant especially in the dry storage room, behind the deep freezer, all white wooden storage shelves and behind the sliding door cooler, underneath and behind the cook line and behind the 3-door freezer and underneath the dishwashet and remove all droppings. Clean affected floor and surfaces with hot water and bleach.
-All food items must be kept covered in bins with tight fiitting lids
-Seal or patch any holes on the exterior of the building
( to be completed by Feb 6, 2019).
