Corrective Action(s): Label the bleach spray bottle used for non-contact food surfaces. Write down the mixture ratio of bleach and water and put it as a label on the bottle Ensure to change the bleach solution daily.

Comments

- Observed blue hose behind the steel kettle. Ensure that the hose is of a food grade material (ie: for potable water)
- Ensure to monitor the time/temperature of tapioca pearls. Tapioca pearls are potentially hazardous food that could support the growth of pathogens which cause foodborne illness. Do not use tapioca pearls that are held at room temperature for more than 4 hours.

- Prep cooler measured at 2C. Good
- Upright cooler measured at 2C. Good
- Upright freezers at -18C
- Ice cream freezer at -16C
- Handwashing sinks are equipped with hot and cold running water, liquid soap and paper towels
- Bleach sanitizing solution measured at 200ppm. Informed the employee to use 2 capfuls of bleach per 2 gallons of water. Operator mixed a new bleach solution measured at 100ppm
- Dishwasher final rinse temperature is 82C at the plate's surface (minimum required is 71C)
