All fridges were maintaining foods at 4 degrees or colder with the exception of the chicken display cooler. It was on a defrost cycle at the time of inspection. All freezers are -18 degrees Celsius or colder. General sanitation is overall good. Ensure that the sanitizer water in the deli room sink is thoroughly mixed after filling. Do not store clean and sanitized knives on towels as wet towels can hold bacteria Ensure sanitizer water is tested a t room temperature as per test strip instructions..
