Observation (CORRECTED DURING INSPECTION): No chlorine sanitizer spray bottles on-site. No bleach available on-site for sanitization of kitchen equipment/utensils. High-temperature dishwasher measured at 68.2C final rinse temperature.
Corrective Action(s): Obtain chlorine sanitizer. Prepare chlorine sanitizer spray bottles measured at 100-200ppm. Temporarily use 2-compartment sink for warewashing. One compartment sink is used for washing and rinsing. Second compartment sink used for sanitization. Ensure 2nd compartment sink is measured at 100-200ppm chlorine.

Kitchen cooler, pantry cooler measured at 4C. Kitchen freezer and pantry freezer measured at -18C.
2-compartment sink available.

-Start up temperature logs for all coolers and freezers. Corrected by: Immediately.

NOTE: Two domestic fridges/freezer in the hallway are for residents use only. Premise operations does not use the 2 fridges/freezers in the hallway.
