- Under counter cooler was 3 C
- Display cooler was 3 C
- Freezer was -19 C
- Gelato freezer -17 C
- Hot holding was 60 C or hotter
- Hand sinks had liquid soap, paper towel, hot and cold water
- spray bottles had 200 ppm chlorine and sanitizer bucket with wiping cloth noted 100 ppm chlorine
- dishwasher had a final rinse of 100 ppm chlorine
- No signs of pest activity noted during inspection. Pest control onsite monthly.
**Ensure pest control reports (a copy) is available on-site for review.
- General sanitation is satisfactory
-Dry foods are covered and protected in pest proof containers
-Scoops and utensils are cleaned within every 2 hours.
-All cans appear to be in good condition (no dents or damaged noted)
-Secondary cook step being done and verified with proper thermometer before being hot held.
