Observation: Hand washing station closest to service area not functioning. Operator mentioned that it has not been functioning for a few days and that the repair service has been contacted. Hand washing station at back of bakery department is being used in the meantime.
Corrective Action(s): Repair the hand washing station closest to the service area to ensure staff are washing their hands at adequate frequencies prior to handling ready-to-eat baked items and to prevent cross-contamination. Ensure all staff is aware that gloves are not an alternative to adequate handwashing and that gloves must be changed every time they are potentially contaminated. Hands must be washed with liquid soap and warm water and dried with a single-use paper towel every time gloves are changed/replaced.

Observation: Paper towel dispenser at hand washing station located at the back of the bakery department is no longer mounted. Paper towel was observed placed on a recyling bin.
Corrective Action(s): Repair paper towel dispenser so that it is mounted on the wall and/or place the paper towel in a location which is conveniently located next to the hand washing station whilst protected from potential contamination.

Observations:
- Walk-in cooler at 0'C
- Walk-in freezer at -19'C
- Display cooler at front at 2'C
- All food observed protected from contamination, placed at least 6 inches off the floor and covered
- General sanitation of premises satisfactory
- 3-compartment sink available with drain plugs and QUATS dispenser measured at 200 ppm QUATS concentration with test strips
- QUATS sanitizer spray bottles measured at 200 ppm QUATS concentration during inspection
- No signs of pests during time of inspection
- Staff observed wearing hair nets, hats, gloves and clean uniforms
