*When inquired about pre-cooked bacon, zucchini, and pork ribs, chef stated that those items are being cooled at room temperature for less than 1 hour, wrapped and put into a working cooler.*
**Observed proper cooling procedure; hot boiled soup was being cooled in a cold flowing water in one of the prep sinks. Soup contained in a clear food-grade container**
